How this is calculated

The carbon footprint of food is measured in kilograms of CO₂-equivalent (CO₂e), a single unit that converts methane, nitrous oxide, and other greenhouse gases into their equivalent warming effect. This calculator uses per-serving emission factors derived from the landmark meta-analysis by Poore and Nemecek (Science, 2018), which aggregated data from 38,700 farms and 1,600 food processors to give life-cycle assessments (from land use through farm, processing, transport, and retail) for 40 major food products.

Animal products dominate food-system emissions for three structural reasons: (1) ruminants like cattle emit methane directly; (2) producing animal feed requires land, often converted from forests; and (3) the energy conversion from plant to animal protein is inefficient (roughly 6–10 calories of feed per calorie of meat). Beef carries by far the highest per-serving footprint (~9 kg CO₂e per 150 g serving in this model); plant proteins like lentils and tofu are roughly 60× lower on a per-serving basis.

The vegan plant-food baseline (~1,055 kg CO₂e/year) comes from Scarborough et al. (Nature Food, 2023), which tracked 55,504 UK Biobank participants and found a median footprint of 2.89 kg CO₂e/day for vegan diets. Actual values vary substantially by production system, country, and season — figures are editable estimates useful for comparison rather than precise personal accounting.

Beef has three compounding factors: cattle are ruminants that produce methane (a potent greenhouse gas) during digestion; most beef cattle consume large quantities of grain or pasture that requires land, fertiliser, and water; and the feed-to-meat energy conversion ratio is poor (roughly 6–8 kg of feed per kg of beef). Together these make beef's life-cycle emissions 5–10× higher per gram of protein than chicken, and 20–60× higher than legumes.

The per-serving factors are medians from Poore & Nemecek 2018, which covered a wide range of production systems worldwide. Actual emissions vary enormously — regenerative grass-fed beef can be roughly half the median; intensively grain-fed beef can be higher. Dairy, fish, and plant foods also vary by production system and geography. These figures give meaningful order-of-magnitude comparisons but are not a substitute for region-specific life-cycle assessments.

Diet is typically the second or third largest component of a person's carbon footprint, after home energy use and transport. Switching from a high-meat to a vegan diet can save approximately 1,500–1,700 kg CO₂e per year (roughly equivalent to avoiding 7,000–8,000 car miles).
