How this is calculated

Grams are a unit of mass and tablespoons are a unit of volume, so the ingredient's density bridges the two. The conversion works in two steps: grams divided by the ingredient's density in g/mL gives milliliters, then milliliters divided by 14.7868 (the volume of one US tablespoon) gives tablespoons.

Density varies widely between ingredients: water is 1.000 g/mL, all-purpose flour packs to about 0.593 g/mL, honey to 1.420 g/mL, and baking soda to about 0.690 g/mL. These standard bulk-density values assume normal scooping — sifting or packing an ingredient will shift the actual density.
