How this is calculated

Grams measure mass and fluid ounces measure volume, so the ingredient's density is needed to convert between them. The conversion has two steps: divide the gram weight by the ingredient's density in g/mL to get milliliters, then divide by 29.5735 (mL per US fluid ounce) to arrive at fl oz.

The built-in list covers the most common cooking items with standard bulk densities. Water is 1.000 g/mL by definition, but dry ingredients pack very differently — all-purpose flour sits at about 0.593 g/mL and powdered sugar around 0.560 g/mL because of air trapped between particles. These values assume normal scooping technique, not sifted or compressed measurement. Selecting "Custom ingredient" lets you enter any density you know.

This calculator outputs US fluid ounces (29.5735 mL each). UK imperial fluid ounces are slightly smaller (about 28.41 mL), so if your recipe is British, note that distinction.
